Salmon Hot Dish
- 4 to 6 medium carrots (1-inch pieces)
- 4 to 6 celery stalks (1-inch pieces)
- 8 to 10 small onions
- 15 1/2 oz. can salmon, drained (reserve)
- 1 c. milk
- 1 tsp. pepper
- 1/2 c. Cheddar or American cheese, grated
- 1/2 c. water
- 1 tsp. salt
- 2 Tbsp. margarine
- 3 Tbsp. flour
- 1 tsp. Worcestershire sauce
- In medium saucepan, combine carrots, celery, onions, water and salt.
- Bring to boil, covered, for 15 minutes or until tender. Drain liquid into 2 cup measure.
- Place vegetables in serving dish.
- Cover to keep warm.
- Using saucepan, melt margarine and blend in flour.
- Use salmon liquid and vegetable liquid and enough milk to make 2 cups.
- Stir into flour mixture.
- Cook over medium heat.
- Add cheese and Worcestershire sauce until thickened.
- Pour over vegetables and salmon.
- Serve over baking powder biscuits or mashed potatoes.
