Crazy Good Chocolate Chip Oatmeal Cookies
- 1 cup Butter Flavored Shortening
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 cups Old Fashioned Oats (not Quick Oats)
- 2 cups Rice Krispies
- 1 cup Sweetened Coconut
- 1 cup Semisweet Chocolate Chips
- Preheat oven to 350 degrees F.
- Cream shortening, sugar and brown sugar with your mixer until light and fluffy. Add eggs, one at a time.
- Add vanilla, and beat until well blended.
- In another bowl, blend flour, baking soda, baking powder and salt.
- Slowly, add flour mixture to your sugar mixture.
- Stir in oats, Rice Krispies, coconut and chocolate chips.
- Using a cookie or ice cream scoop, form balls of about 2 tablespoons of dough and place on baking sheet. Be sure to leave about 2 inches between them as these cookies will spread.
- Bake at 350F for 10 minutes.
- Allow cookies to cool on the sheet for a couple of minutes before transferring to cooling rack to cool completely.
