Tuscan White Bean Salad
- FOR THE SALAD:
- 2 cups Mixed Greens
- 2 whole Medium Tomatoes, Diced
- 1/2 whole Red Onion, Diced
- 1 cup Cannellini Beans, Rinsed And Drained
- 1/4 cups Feta Or Goat Cheese

- FOR THE CROUTONS:
- 1/2 cups Day Old Bread (cubed)
- Olive Oil, To Drizzle
- Poultry Seasoning, To Taste

- FOR THE DRESSING:
- 2 cloves Garlic, Minced
- 1/4 cups Balsamic Vinegar
- 1/2 cups Olive Oil
- 1/4 teaspoons Salt
- Pinch Sugar
- 1 sprig Fresh Rosemary Leaves, Minced
- Toss all the salad ingredients together in a bowl.
- To make the croutons, lay the bread flat on a baking sheet. Drizzle with olive oil and poultry seasoning. Cook in a 400u0b0F oven until the bread is golden brown, about 7 minutes. Let cool slightly and add to the salad.
- To make the dressing, whisk all the dressing ingredients together in a bowl. Test with a piece of lettuce and adjust seasonings as you desire. Drizzle over salad and toss.
