Oatmeal Bars
- FOR THE OATMEAL COOKIE:
- 1 stick Unsalted Butter, Softened
- 1 cup Brown Sugar
- 1 whole Egg
- 1/2 teaspoons Vanilla Extract
- 1-1/2 cup Oats
- 1 cup All-purpose Flour
- 3/4 teaspoons Baking Soda
- FOR THE CARAMEL:
- 1 cup Granulated Sugar
- 1/4 cups Water
- 1/4 cups Heavy Cream
- 2 Tablespoons Unsalted Butter
- 1/4 teaspoons Salt
- Preheat the oven to 350u0b0F.
- For the oatmeal cookie:
- In the bowl of a stand mixer, cream the butter and sugar. Mix in the egg and vanilla extract. Mix in the oats, flour, and baking soda just until combined.
- Press most of the cookie dough, except for about 1 cup, into the bottom of a greased 9-inch baking dish.
- For the caramel:
- In a small saucepan over high heat, cook the sugar and water, swirling often, until it becomes a deep amber. Remove from the heat and add the cream, stirring to combine. Once the cream in combined, stir in the butter and salt until the butter is melted.
- Pour the caramel over the oatmeal cookie base and spread it in an even layer. Using your hands, break the remaining dough into bits about 1/2" to 1" wide and drop evenly over the caramel.
- Bake the bars for 40 minutes or until the top is golden brown. Let cool completely in the pan before removing. These guys can be sticky but are worth the extra hassle. Enjoy!
