Maui Chicken
- 1/2 c. chicken broth
- 1 Tbsp. dry white wine
- 1 Tbsp. dry sherry
- 1 tsp. sugar
- 1 tsp. cornstarch
- 1 whole chicken breast (about 1 lb.), skinned, boned and cubed
- 1 small green pepper, cut into strips
- 1 small sweet red pepper, cut into strips
- 3 green onions, cut into 1 inch pieces
- 1/2 c. bamboo shoots, sliced
- 1-2 slices fresh ginger
- 1 c. fresh pineapple chunks
- 1/2 c. whole cashews
- Combine broth, white wine, sherry, sugar and cornstarch in 2 c. measure.
- Stir thoroughly.
- Cook on HI for 1 1/2-2 minutes or until sauce is clear, stirring once; set aside.
- Combine chicken, green and red peppers, green onions, bamboo shoots and ginger in 2 quart casserole.
- Cover and cook on HI for 6 minutes.
- Add pineapple, cashews and sauce mixture.
- Cover and cook on HI for 2-3 minutes or until hot.
- 4 servings.
- Total cooking time:
- 9 1/2-11 minutes.
