Chocolate Chip Cookie Stuffed With Peanut Butter Cup
- 1 cup Margarine
- 1-1/4 cup Superfine Sugar
- 2 whole Eggs
- 1/2 Tablespoons Honey
- 1 teaspoon Vanilla
- 2-1/2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 12 ounces, weight Chocolate Chips
- 4 whole Dark Chocolate Peanut Butter Cups, Quartered
- Preheat oven to 350u0b0F.
- Cream margarine and sugar together. Mix in eggs, honey and vanilla.
- Add flour and baking powder. Mix until just combined.
- Gently stir in chocolate chips
- Place dough, covered, in the freezer for 15 minutes.
- Spoon 16 balls of dough onto a nonstick (or greased) baking sheet. Gently flatten each with the back of a spoon.
- Place a piece of a peanut butter cup (see note below) on top of each flatten cookie dough ball. Spoon another scoop of cookie dough batter over each.
- Carefully press the edges of the cookie together to form a sphere around the peanut butter cup.
- Bake for 18 minutes.
- Allow to cool slightly before eating.
