Apple Peanut Butter Crisp

  1. 1. Preheat oven to 350u0b0F. Lightly spray a 9-inch pie plate or an 8x8 baking dish with nonstick cooking spray.
  2. 2. In a large bowl, toss together the apples, cinnamon, sugar, nutmeg, and salt. Set aside.
  3. 3. For the topping, in a medium-sized bowl stir together, oats, flour, sugar substitute, brown sugar, and salt until well-combined. Cut in peanut butter and butter with a fork until mixture is in pea-sized crumbs.
  4. 4. Pour apples into pie dish. Sprinkle oat topping on top.
  5. 5. Bake for 20 minutes. Cover the top of crisp with aluminum foil and bake for another 10-15 minutes or until filling starts to bubble.
  6. 6. Allow crisp to cool for 10 minutes before serving.
  7. 7. Store leftovers in the refrigerator.
  8. Note: If your apple mixture still looks dry by the time you are done with the topping, you may want to add 1 tablespoon of lemon juice.
