Apple Peanut Butter Crisp
- 5 Large Apples, Diced
- 1 teaspoon Cinnamon
- 3/4 cups Granulated Sugar Substitute
- 1/4 teaspoons Nutmeg
- 1/8 teaspoons Salt
- 1 Tablespoon Lemon Juice, If Needed (See Note)
- FOR THE TOPPING:
- 1-1/2 cup Quick Oats
- 1/2 cups White Whole Wheat Flour
- 1/4 cups Granulated Sugar Substitute
- 1/4 cups Brown Sugar
- 1/2 teaspoons Salt
- 1/2 cups No-stir Natural Creamy Peanut Butter
- 1/4 cups Butter, Softened
- 1. Preheat oven to 350u0b0F. Lightly spray a 9-inch pie plate or an 8x8 baking dish with nonstick cooking spray.
- 2. In a large bowl, toss together the apples, cinnamon, sugar, nutmeg, and salt. Set aside.
- 3. For the topping, in a medium-sized bowl stir together, oats, flour, sugar substitute, brown sugar, and salt until well-combined. Cut in peanut butter and butter with a fork until mixture is in pea-sized crumbs.
- 4. Pour apples into pie dish. Sprinkle oat topping on top.
- 5. Bake for 20 minutes. Cover the top of crisp with aluminum foil and bake for another 10-15 minutes or until filling starts to bubble.
- 6. Allow crisp to cool for 10 minutes before serving.
- 7. Store leftovers in the refrigerator.
- Note: If your apple mixture still looks dry by the time you are done with the topping, you may want to add 1 tablespoon of lemon juice.
