Leftover Rice Waffles
- 1-1/2 cup Coconut Flour (or All-Purpose Flour If Gluten Is Not A Problem For You)
- 2 Tablespoons Brown Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/4 teaspoons Nutmeg
- 1 cup Cooked Rice (day Old Rice Is Best)
- 1-1/2 cup Coconut Milk (but Any Milk Will Do)
- 2 whole Eggs, Separated
- 3 Tablespoons Butter, Melted
- Preheat a waffle iron until hot.
- Whisk together flour, sugar, baking powder, baking soda, cinnamon and nutmeg, then mix in the rice with your fingertips. Stir in milk, egg yolks, and butter until just combined. Whisk egg whites until they just hold stiff peaks, then fold into the batter gently but thoroughly.
- Cook waffles according to manufacturer's instructions.
