Leftover Rice Waffles

  1. Preheat a waffle iron until hot.
  2. Whisk together flour, sugar, baking powder, baking soda, cinnamon and nutmeg, then mix in the rice with your fingertips. Stir in milk, egg yolks, and butter until just combined. Whisk egg whites until they just hold stiff peaks, then fold into the batter gently but thoroughly.
  3. Cook waffles according to manufacturer's instructions.
