Peanut Butter Sandwich Cookies
- FOR COOKIE BATTER
- 1 cup Butter Or Shortening
- 1 cup Creamy Peanut Butter
- 1 cup Sugar
- 1 cup Brown Sugar
- 1 teaspoon Vanilla
- 3 whole Eggs
- 3 cups Flour
- 2 teaspoons Baking Soda
- 1/4 teaspoons Salt

- FOR FILLING:
- 3 cups Powdered Sugar
- 1/2 cups Creamy Peanut Butter
- 6 Tablespoons Milk
- 1 teaspoon Vanilla
- In a mixing bowl, cream the shortening, peanut butter and sugars, add vanilla and eggs.
- Combine flour soda and salt, add to creamed mixture.
- Shape into 1 inch balls, place two inches apart on baking sheet. Flatten to 3/8 inch with fork or bottom of a glass.
- Bake at 375 for 7-8 minutes or until golden. Cool on wire racks.
- In a mixing bowl, beat filling ingredients (the last 4) until smooth. Spread on half of the cookies, and top each with another cookie. Makes about 4 dozen.
