Peanut Butter Sandwich Cookies

  1. In a mixing bowl, cream the shortening, peanut butter and sugars, add vanilla and eggs.
  2. Combine flour soda and salt, add to creamed mixture.
  3. Shape into 1 inch balls, place two inches apart on baking sheet. Flatten to 3/8 inch with fork or bottom of a glass.
  4. Bake at 375 for 7-8 minutes or until golden. Cool on wire racks.
  5. In a mixing bowl, beat filling ingredients (the last 4) until smooth. Spread on half of the cookies, and top each with another cookie. Makes about 4 dozen.
