Blueberry Lemonade Spritzers
- FOR THE WINE SIMPLE SYRUP (optional):
- 1/4 cups White Sugar
- 1 cup Fruity White Wine (yet Not An Overly Sweet Wine)
- FOR THE SPRITZERS:
- 2 cups Fresh Blueberries
- 3 pieces Lemon Peel (Avoid Removing Any Of The White Pith)
- 1 cup Fresh Squeezed Lemon Juice
- 6 cups Club Soda Or Seltzer
- Wine Simple Syrup, To Taste (optional)
- Fresh Mint Sprigs, For Garnish
- For the wine simple syrup:
- In a saucepan add the sugar and white wine. Stir over medium-low heat until the sugar dissolves into the wine. Remove and let cool. Chill in the fridge until ready to use.
- For the spritzers:
- Add the blueberries along with the lemon peel and juice to a saucepan. Bring to a boil and simmer until the berries just begin to soften and burst. Remove the lemon peel and carefully spoon in the berries and juice into a food processor.
- Puree until smooth and then strain through a mesh strainer into a large bowl or measuring cup and discard the solids. Slowly add in the club soda and stir.
- Add ice cubes to glasses and add a couple tablespoons of the wine syrup (if using). Pour blueberry lemonade over top and stir before serving.
- Garnish with fresh mint sprigs.
