Stacked Veggie Salad

  1. In medium sauce pan add butter, corn and red onion. Saute till corn and onion are tender. Remove from heat and cool.
  2. Start stacking veggies:
  3. Put a cucumber down, add a thin layer of goat cheese.
  4. Then a red tomato and thin layer of goat cheese.
  5. Then a cucumber and thin layer of goat cheese.
  6. Then yellow tomato and thin layer of goat cheese.
  7. Repeat layers till about 4 inches tall.
  8. Top each with corn and red onion mixture
  9. Drizzle each with a tablespoon of Italian dressing.
  10. Enjoy!
