Chili And Cheese, Ole!

  1. Brown ground beef until crumbly.
  2. In another skillet, melt butter.
  3. Add onion and saute until just tender.
  4. Add tomato sauce, chili seasoning mix and water.
  5. Simmer for 5 minutes.
  6. Beat eggs slightly.
  7. Add cream and mix well.
  8. Remove tomato mixture from heat.
  9. Add egg-cream mixture slowly, stirring constantly.
  10. Place half of the corn chips in the bottom of a 2-quart casserole.
  11. Top with half of the browned beef.
  12. Cover with a layer of half the Monterey Jack cheese, then add layer of tomato sauce.
  13. Repeat the layers.
  14. Top with the sour cream and sprinkle with Cheddar cheese. Bake at 325u0b0 for 25 to 30 minutes.
  15. Makes 6 to 8 servings.
  16. I do all the preparation ahead of time and then assemble at the last minute!
