Mc’S Homemade Granola
- 1 stick Butter
- 3/4 cups Honey
- 1/2 cups Packed Brown Sugar
- 2 cups Old Fashioned Oats
- 1-1/2 cup Mixed Nuts
- 1 dash Vanilla
- 1 pinch Salt
- 3/4 cups Craisins
- 4 ounces, weight White Chocolate Chips (Optional)
- 1. Preheat the oven to 325F. Butter an 8 inch square baking pan. Line the bottom and sides with parchment paper. (I didn't have parchment paper, so I just greased the pan really well).
- 2. In a large saucepan, melt the butter with the honey and sugar and cook over moderate heat, stirring constantly until an amber caramel forms, about 5 minutes.
- 3. Stir in the oats, mixed nuts, vanilla, and salt and cook, stirring constantly, about 2 minutes. Remove from heat and stir in the Craisins. Pour into the 8 inch pan and smush it down tightly. Put into oven and bake for 20 - 25 minutes.
- 4. Let cool completely before removing from the pan or it will fall apart! *If it falls apart, you can form it into "bar" shapes...and put in fridge to harden.
- (You can also make this with white chocolate chips. Add 4 ounces white chocolate chips when you add the Craisins or you can use them in place of them. Beware, they will melt!)
