George'S Vegetable Soup
- 1 lb. ground beef
- 2 c. diced potatoes
- 2 c. diced rutabagas
- 2 c. diced carrots
- 2 c. diced celery
- 1 c. diced onions
- 1 qt. V-8 juice
- 2 cans stewing tomatoes
- 1 can corn (or frozen)
- 1 diced green pepper
- 1/2 head cabbage
- 1 small can mushrooms (or fresh)
- salt and pepper to taste
- 2 tsp. sugar
- 4 c. water or more
- 1/2 c. Minute rice
- Brown ground beef well in pot you will cook it in. In microwave, cook celery and carrots with some water for 10 minutes on High. Put all ingredients, except rice, in pot.
- Bring to low boil, then simmer 1 1/2 hours. The last 15 to 20 minutes, add Minute rice. The main secret is browning meat well. Eat and enjoy.
