Karithopeta(Walnut Cake)
- 1 1/2 c. butter
- 1 c. sugar
- 6 eggs
- 1/2 c. milk
- 1 tsp. grated orange peel
- 2 c. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 2 c. walnuts, chopped
- whipped cream
- orange wedges
- Cream butter in large mixing bowl.
- Gradually add sugar; continue beating until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Mix together milk and grated orange peel. Sift together flour, baking powder, salt and cinnamon.
- Add to creamed mixture alternately with milk and peel, beginning and ending with dry ingredients.
- Add nuts; mix well.
- Pour batter into greased 9 x 13-inch baking pan.
- Bake in preheated 350u0b0 oven for 35 to 40 minutes.
- While hot, cut into diamond shapes and pour syrup over top.
- Cool 1 hour.
- Garnish with whipped cream and orange wedges.
- Serves 16.
