Delicious Berry Cake
- 2 cups Plain Yoghurt OR Kefir/clabber
- 2 cups Sugar
- 4 cups Flour
- 1 teaspoon Baking Soda
- 7 ounces, weight Butter, Melted
- 2 teaspoons Vanilla Sugar
- 1 pinch Salt
- 2 cups Various Berries (strawberries, Raspberries, Blueberries, Blackberries, Cherries Etc.)
- 3 Tablespoons Sugar
- 2 Tablespoons Potato Starch
- Mix together the yoghurt, sugar, flour, baking soda, melted butter, vanilla sugar and salt. Pour the mixture into a square-shaped baking form (8x8 or similar) that you've lined with baking paper. Then mix berries, 3 tablespoons of sugar and 2 tablespoons of potato starch and spread this mixture on top of the dough.
- Heat the oven to 200 C (about 390 F). Bake the cake in the preheated oven for 20-30 minutes. If berries are very moist, the baking time may be longer, don't worry!
- Remove from the oven and leave the cake to cool a bit. Cut into square pieces.
- The taste is marvelous!
