Banana-Garam Masala Muffins
- 2 whole Medium Sized Bananas, Peeled And Mashed
- 2 whole Eggs
- 1/4 cups Canola Oil
- 1 teaspoon Vanilla Extract
- 1/4 cups Honey
- 1 cup Milk
- 3/4 cups Granulated Sugar, Plus 1 Tablespoon For Cinnamon Sugar
- 2-1/4 cups Cake Flour
- 1/2 teaspoons Garam Masala
- 2-1/4 teaspoons Baking Powder
- 1 teaspoon Ground Cinnamon
- Preheat the oven to 350u0b0F.
- Combine the mashed bananas, eggs, oil, vanilla, honey and milk in a large bowl. Add 3/4 cup of granulated sugar and whisk to combine.
- Add the cake flour, garam masala and baking powder and whisk the mixture to get rid of any lumps.
- Pour the batter into a greased jumbo muffin pan (my pan makes 6 muffins).
- In a small bowl combine the remaining 1 tablespoon of sugar and the cinnamon. Sprinkle the mixture evenly over the tops of the muffins. Bake for 55 minutes, or until a cake tester comes out clean. Enjoy!
