A Perfectly Dressed Cucumber And Tomato Salad
- 3 whole Cucumbers, Peeled And Thickly Sliced
- 2 Tablespoons Kosher Or Pickling Salt
- 3 whole Garden Fresh Tomatoes, Cut Into Chunks
- 1 whole Sweet Onion, Cut In Half Rings
- 1 bottle Fat-Free Italian Dressing (16 Ounce Size)
- 1/2 cups Balsamic Vinegar
- 2 teaspoons Sugar
- 1. Peel and slice cucumbers. Put them in a bowl and cover them with water. Add 2 tablespoons salt and allow to sit at room temperature for 3 to 4 hours.
- 2. Drain the water off of the cucumbers and add tomatoes and onions.
- 3. Mix 8 ounces of Italian dressing with balsamic vinegar and sugar. Pour this over the vegetables. Add additional dressing to taste.
- 4. Refrigerate until cool, at least 2 hours. Store in airtight container up to 4 days in the refrigerator.
- Note: Salting the cucumbers can be omitted, but it does take the bitterness from the cucumbers and makes them more easier to digest.
