Pizza Frittata
- 8 whole Egg Whites
- 4 whole Eggs
- 1 cup Pizza Sauce (your Own Or In A Jar)
- 1 cup Mozzarella Cheese, Shredded
- 1/2 cups Parmesan Cheese, Shredded
- Optional Pizza Toppings, Use Your Favorite
- Preheat oven to 375F.
- Whisk together egg whites and eggs. Pour eggs into a greased oven safe skillet (I use cast iron). Bake for 10 minutes or until set. Remove from oven when eggs are set.
- From here on, treat it like regular pizza:
- Cover the egg 'crust' with pizza sauce
- Layer with cheese and any toppings you may choose
- ( I used spinach and feta, but you use what you
- like!)
- Place 'pizza' back in oven, under the broiler this time. Broil until cheese is bubbly ( about 2-5 minutes). Enjoy your low carb pizza!
- P.S. I am going to use roasted veggies next time!
