Golden Easter Bread

  1. Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.
  2. Stir sugar, oil and salt into yeast mixture.
  3. Add eggs, lemon rind and 2 cups flour; beat at low speed with an electric mixer until mixture is smooth.
  4. Stir in enough remaining flour to make a soft dough.
  5. Turn dough out onto a floured surface.
  6. Add raisins; knead until smooth and elastic (about 8 to 10 minutes).
  7. Place in a well-greased bowl, turning to grease top. Cover; let rise in warm place (85u0b0) free from drafts, 1 hour or until doubled in bulk.
