Golden Easter Bread
- 1 pkg. dry yeast
- 1/4 c. sugar
- 2 tsp. salt
- 1 tsp. grated lemon rind
- 4 or 5 c. all-purpose flour, divided
- 3/4 c. warm water
- 1/4 c. vegetable oil
- 3 eggs, slightly beaten
- 1/3 c. raisins
- butter or margarine, melted
- Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.
- Stir sugar, oil and salt into yeast mixture.
- Add eggs, lemon rind and 2 cups flour; beat at low speed with an electric mixer until mixture is smooth.
- Stir in enough remaining flour to make a soft dough.
- Turn dough out onto a floured surface.
- Add raisins; knead until smooth and elastic (about 8 to 10 minutes).
- Place in a well-greased bowl, turning to grease top. Cover; let rise in warm place (85u0b0) free from drafts, 1 hour or until doubled in bulk.
