Pistachio Pudding Rice Krispie Treats

  1. In a large pot melt the butter over medium-low heat. Once the butter is melted stir in the marshmallows until they have dissolved. When the marshmallow mixture is smooth remove pot from heat. Add in the pistachio pudding mix, almond extract, and food coloring, mixing it until it is incorporated.
  2. Add in the Rice Krispies and fold them in until they are completely coated in the marshmallow mixture.
  3. Pour the Rice Krispies mixture into an 8x8 baking pan that you've sprayed with cooking spray. Press the Rice Krispies down into the pan with greased hands.
  4. Melt the dark chocolate in the microwave (for 30 seconds at a time, stirring between additional 30 second increments) or in the top of a double boiler (with simmering water in the bottom).
  5. Drizzle the melted chocolate over the Rice Krispie treats. Let the chocolate harden before cutting them into bars.
  6. Notes: Store the bars in an airtight container to prevent them from drying out.
