Luck O’ The Irish Apple Cake
- 1-1/4 cup Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg, Freshly Grated
- 4 Tablespoons Butter, Plus 1 Tablespoon For The Baking Dish
- 1 cup Sugar
- 1 whole Egg
- 1 teaspoon Vanilla
- 1 ounce, fluid Whiskey (or 2 Tablespoons Water)
- 2 cups Apples, Peeled, Cored, And Diced
- 1/2 cups Pecans, Coarsely Chopped
- Preheat oven to 350u0b0F. Grease an 8" square baking dish with 1 tablespoon butter. In a medium-size bowl, combine flour, baking powder, soda, salt, cinnamon and nutmeg; set aside.
- Cream butter and sugar until fluffy. Add egg; beat again. Add vanilla and whiskey (or water); mix until combined. Stir in apples and pecans.
- With a wooden spoon, mix in dry ingredients. Batter will be thick. Spread batter in prepared pan. Bake at 350u0b0F for 35 to 40 minutes, or until a pick inserted in the center comes out clean. Cool on a wire rack. Serve warm topped with whipped cream or ice cream.
