Luck O’ The Irish Apple Cake

  1. Preheat oven to 350u0b0F. Grease an 8" square baking dish with 1 tablespoon butter. In a medium-size bowl, combine flour, baking powder, soda, salt, cinnamon and nutmeg; set aside.
  2. Cream butter and sugar until fluffy. Add egg; beat again. Add vanilla and whiskey (or water); mix until combined. Stir in apples and pecans.
  3. With a wooden spoon, mix in dry ingredients. Batter will be thick. Spread batter in prepared pan. Bake at 350u0b0F for 35 to 40 minutes, or until a pick inserted in the center comes out clean. Cool on a wire rack. Serve warm topped with whipped cream or ice cream.
