Gooey Peanut Butter Chocolate Chip Banana Bars
- 1/4 cups Nonfat Greek Vanilla Yogurt
- 1 whole Banana, Mashed
- 1 cup Organic Chunky Peanut Butter
- 1 cup Brown Sugar, Packed
- 1/4 cups Sugar
- 1 Tablespoon Molasses
- 4 whole Eggs
- 1 Tablespoon Vanilla
- 2 cups White Whole Wheat Flour
- 1 cup Rolled Oats
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Sea Salt
- 1-1/2 cup Dark Chocolate Chips
- 1/2 cups Chopped Peanuts
- Preheat oven to 350u0b0F and grease a 9x13 baking dish.
- 1. In the bowl of an electric mixer, cream yogurt, banana, and peanut butter together until fluffy.
- 2. Add sugars and mix until combined.
- 3. Add the molasses, eggs and vanilla. Mix until incorporated on low speed.
- 4. Keeping the mixer on low speed, add the flour, oats, baking power, cinnamon, salt, chocolate chips, and peanuts slowly. Mix until everything is combined.
- 5. Pour the batter in your prepared dish.
- 6. Bake for 26-28 minutes or until the edges are golden brown and a toothpick inserted comes out clean. They may look a little under cooked in the center, but they will set up. Let cool for about 5 minutes before cutting into them.
