Peach Crisp
- FOR THE OATMEAL MIXTURE:
- 1/2 cups Flour
- 2/3 cups Brown Sugar
- 1/2 cups Oats
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1/3 cups Butter, Cold, Plus Extra For Ramekins
- FOR THE PEACHES:
- 7 whole Peaches: Peeled, Pitted And Sliced
- 2 Tablespoons Sugar For Sprinkling
- 1 teaspoon Cinnamon
- 1 teaspoon Almond Extract
- For the oatmeal mixture: In a bowl, mix together flour, brown sugar, oats, cinnamon and nutmeg. Cut in the cold butter using a pastry blender or fork until mixture resembles coarse peas.
- For the peaches: In a separate bowl, peel, pit and slice peaches. Sprinkle with sugar, cinnamon and almond extract. Toss to coat.
- Rub 4 large ramekins with butter and spoon peaches into the bottom of the dishes. Top with oatmeal mixture.
- Bake at 375-400u0b0F for 20 minutes, until bubbly and golden.
