Chicken Divan
- 1/4 c. butter
- 1/4 c. sifted flour
- 1 c. chicken broth
- 1 c. milk
- 3/4 tsp. salt
- 1/8 tsp. white pepper
- 1/8 tsp. nutmeg
- 1/4 c. plus 2 Tbsp. grated Parmesan cheese
- 3 Tbsp. dry sherry
- 1 (2 lb.) head broccoli, trimmed and steamed until tender
- 10 to 12 slices cooked chicken (or 6 poached chicken breasts)
- 1/2 c. heavy cream
- Preheat oven to 350u0b0.
- Melt butter in saucepan over medium heat; blend in flour, slowly add broth and milk and heat, stirring until thickened.
- Mix in salt, pepper, nutmeg, 1/4 cup cheese and sherry.
- Arrange broccoli in single layer in buttered 2-quart au gratin or shallow casserole and sprinkle with remaining 2 tablespoons cheese.
- Top with chicken slices.
- Beat cream until soft peaks form and fold in sauce; pour over chicken.
- Bake uncovered 1/2 hour until bubbly.
- Broil quickly to brown and serve.
- Serves 6.
