Easy Minestrone Soup
- 1 Tablespoon Margarine
- 1 teaspoon Oil
- 1 whole Small, Sweet Onion, Chopped
- 1 whole Carrot, Chopped
- 1/2 cups Chopped Celery
- 1 whole Zucchini, Chopped
- 1 teaspoon Italian Herbs
- 1 teaspoon Dried Basil
- 6 cups Vegetable Stock
- 1 can 28 Oz. Diced Tomatoes
- 1 can (15 Oz. Size) Kidney Beans
- 3 cloves Garlic, Chopped
- 1/8 cups Balsamic Vinegar
- 1 cup Spinach, Torn
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Pepper
- 1/2 cups Pasta (any Kind)
- 1 Tablespoon Nutritional Yeast Flakes, To Add A Cheesy Depth (optional)
- In a large soup pot, saute the onion in oil and margarine over medium heat until translucent. Add celery, carrot, zucchini, and herbs, sauteing for about 1 minute. Add all other ingredients, except for the pasta and nutritional yeast flakes (if using). Simmer for 20 minutes. Add pasta, and simmer for an additional 10 minutes. Just before serving, stir in the nutritional yeast flakes (if using), and enjoy!
