Catfish Stew(Makes 2 Gallons)
- 1 bell pepper
- 1 stalk celery
- 1 lb. bacon
- 4 lb. catfish
- 2 lb. potatoes
- 2 large onions
- 1/2 gal. catsup
- salt and black pepper
- 1/2 gal. Italian tomatoes, chopped
- crushed red pepper
- ground red pepper
- 3/4 c. brown sugar
- Texas Pete to taste
- Dice celery, bell peppers and onions.
- Boil catfish for approximately 15 minutes, then remove from water (save water). Squeeze all water from catfish and ensure all bones are removed. Cut bacon in 1-inch pieces and place in large heavy pot over medium heat.
- Stir while cooking.
- When bacon is done, saute bell peppers and celery.
- Add onions; continue to saute until done.
- Add salt and pepper.
- Cook and drain potatoes.
- Combine all ingredients, except red pepper, sugar and Texas Pete.
- Reduce to low heat; stir often.
- Add red peppers, Texas Pete and brown sugar.
- For stronger taste, add saved water or water if too thick.
- Season to taste.
