Chocolate Pie
- single crust for 9-inch pie
- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 1/3 c. sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 4 egg yolks, beaten
- 2 oz. semi-sweet melted chocolate
- 1 tsp. vanilla
- 1 Tbsp. milk
- Bake and cool pie crust.
- Soften gelatin in cold water. Combine 1/3 cup sugar, cornstarch and salt in heavy saucepan. Gradually stir in milk, blending until smooth.
- Cook over medium heat, stirring constantly, until filling comes to a boil.
- Cook for 5 minutes then remove from heat.
- Stir a small amount into beaten egg yolks then add to filling.
- Cook for 1 minute.
- Remove from heat and stir in gelatin.
- Blend melted chocolate and vanilla into filling.
- Fill pie shell and let cool.
- Serve with whipped cream.
