Chicken Kabob Supreme
- 2 whole chicken breasts, skinned and deboned
- 1/2 c. vegetable oil
- 1/4 c. soy sauce
- 1/4 c. Chablis or white wine
- 1/4 c. light corn syrup
- 1 Tbsp. sesame seed
- 3 small zucchini, cut into 1-inch pieces
- 2 Tbsp. lemon juice
- 1/4 tsp. garlic powder
- 1/4 tsp. ground ginger
- 1 small pineapple, cut into 1-inch cubes
- 1 large green pepper, cut into 1-inch pieces
- 2 medium onions, quartered
- 1/2 lb. fresh mushroom caps
- 1 pt. cherry tomatoes
- Cut chicken into 1-inch pieces; set aside.
- Combine oil, soy sauce, wine, corn syrup, sesame seed, lemon juice, garlic powder and ginger; mix well.
- Add chicken.
- Cover and marinate at least 2 hours in refrigerator.
- Remove chicken from marinade, reserving marinade.
- Alternate chicken, pineapple and vegetables on skewers. Grill about 6 inches from medium-hot coals for 15 to 20 minutes, or until done, turning and basting often with marinade.
