Peanut Butter Banana Cookies

  1. Heat oven to 350 degrees F. Line cookie sheets with silpat mats.
  2. In a large bowl combine brown sugar, butter, peanut butter, egg and vanilla. Beat with an electric mixer until light and fluffy. Add bananas. Beat at low speed until just combined. Add in flour, baking soda and salt. Beat at low speed until soft dough forms.
  3. Drop by heaping teaspoons onto cookie sheets. Press down the dough slightly to flatten. Bake for 10-12 minutes until browned and set. Cool completely on a rack.
  4. For the frosting:
  5. Combine the powdered sugar, butter, melted chocolate and milk, beat until smooth. Use just enough milk to get a thick, spreadable icing.
  6. Spread icing on cooled cookies. Let dry completely before storing in an airtight container.
