Banana Orange Muffin Bread
- FOR THE BREAD:
- 2 cups Flour
- 1/2 cups Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 cup Mashed Bananas, Ripened
- 1 whole Egg
- 1/4 cups Butter, Melted
- 1 teaspoon Valencia Orange Peel
- 1/3 cups Orange Juice
- FOR THE STREUSEL:
- 2 Tablespoons Butter
- 2 Tablespoons Sugar
- 1/4 cups Flour
- 1 teaspoon Valencia Orange Peel
- Preheat oven to 400 F. Spray the bottom of a 9 x 5 loaf pan with vegetable spray.
- For the bread:
- In a large bowl, combine 2 cups flour, 1/2 cup sugar, baking powder, baking soda and salt.
- In a large mixer bowl combine bananas, egg, 1/4 cup melted butter, 1 teaspoon orange peel and juice. Mix well.
- Add dry ingredients into the banana mixture and mix until just combined. Pour into prepared pan.
- To prepare streusel:
- Combine 2 tablespoons butter, 2 tablespoons sugar, 1/4 cup flour and 1 teaspoon orange peel in a mixing bowl. Mix until blended. Mixture will be crumbly. Sprinkle over batter.
- Bake for 32 minutes or until a toothpick inserted into the center of the loaf comes out clean.
