Pear Arugula Salad With Dates And Parmesan
- 1 Tablespoon Extra Virgin Olive Oil
- 2 teaspoons Pure Maple Syrup, Preferably Grade B
- 1/2 whole Lemon, Juiced (about 2 Teaspoons)
- 1 teaspoon Coarse Ground Mustard (or Dijon)
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 4 cups Arugula, Washed And Dried
- 4 whole Large Soft Medjool Dates, Pitted And Chopped
- 1 whole Ripe But Firm Anjou Pear, Cored And Thinly Sliced
- 1/4 cups Shavings Fresh Parmesan Cheese
- In a small bowl, whisk together the olive oil, maple syrup, lemon juice, and mustard until emulsified. Season to taste with salt and pepper.
- Toss the arugula with the dressing. Gently toss in the chopped dates and sliced pears. Garnish with parmesan shavings.
