7 Layer Casserole
- 1 c. uncooked regular rice
- 1 (12 oz.) can whole kernel corn
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 (15 oz.) can tomato sauce
- 1/2 c. water
- 1/2 c. onion, finely chopped
- 3/4 lb. ground chuck
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. water
- 4 strips bacon, cut in half
- Layer ingredients in a 2-quart baking dish in this order: rice, corn and its liquid, 1 teaspoon salt, 1/8 teaspoon pepper, 1/2 can tomato sauce, 1/2 cup water, onion, ground beef, 1/2 teaspoon salt, 1/8 teaspoon pepper, remaining tomato sauce and 1/4 cup water.
- Cover meat evenly with the bacon strips.
- Cover casserole.
- Bake at 350u0b0 for 1 hour.
- Uncover; continue to bake for 20 minutes, or until bacon is crisp.
- Makes 4 servings.
