Sweet Potato Donuts
- 1/2 cups Butter
- 2/3 cups Brown Sugar
- 1 whole Egg
- 2/3 cups Vanilla Yogurt
- 1 cup Sweet Potato, Cooked And Mashed
- 1/2 teaspoons Salt
- 2 teaspoons Cinnamon
- 1/2 teaspoons Nutmeg
- 1-1/2 teaspoon Baking Powder
- 1-1/2 teaspoon Baking Soda
- 2 cups Flour
- 1 cup White Chocolate Chips, Melted
- 1/2 cups Mini Marshmallow Bits
- Preheat your oven to 375 F. Have your donut pan handy.
- In a large bowl, cream butter and sugar until light and fluffy. Add the egg, yogurt, mashed sweet potato and salt and cream again. Set aside.
- Sift together the cinnamon, nutmeg, baking soda, baking powder and flour. Slowly start to mix the flour into the butter mixture.
- Place donut batter in a plastic bag and cut the tip off. Pipe into a donut pan, filling them half full. Bake at 375 F for 10 minutes. Remove from the oven and let them cool in the pan for 2-3 minutes before gently removing them to a wire rack to cool completely.
- Dip the tops of the cooled donuts in the melted white chocolate and sprinkle with the marshmallow bits. Let set. Store in a sealed container.
