Peanut, Sweet Potato And Spinach Stew
- 2 Tablespoons Olive Oil
- 1/2 Medium Onion, Diced
- 3 cloves Garlic, Minced
- 1 Tablespoon Fresh Ginger, Peeled And Minced
- 1/2 teaspoons Ground Cloves
- 1/2 teaspoons Cayenne Pepper
- 1/2 teaspoons Cumin
- 1/4 teaspoons Salt
- 1 Carrot, Diced
- 1 Medium Sweet Potato, Cubed
- 2-1/2 cups Vegetable Broth
- 1 Tablespoon Agave Nectar
- 2 Tablespoons Peanut Butter
- 3 cups Spinach, Chopped
- 1. Heat the olive oil in a pot over medium heat.
- 2. Once oil is hot, add the onions and saute for about 5 minutes.
- 3. Add the garlic and ginger and continue sauteing for another 2 minutes.
- 4. Stir in the spices and salt and cook for additional 1-2 minutes, until everything is nice and fragrant.
- 5. Add the carrot, sweet potato, broth and agave or honey and bring to a boil and then reduce to a simmer.
- 6. Stir in the peanut butter and let it stew for about 15 minutes.
- 7. Add in the spinach, and stir just until wilted.
- 8. Enjoy!
