Crunchy Winter Salad With Zesty Bacon Vinaigrette
- FOR THE SALAD:
- 2 heads Romaine Lettuce
- 1/2 heads Purple Cabbage (small Head)
- 3 stalks Celery
- 2 whole Carrots
- 1 bunch Green Onions
- 1 bunch Radishes
- FOR THE VINAIGRETTE:
- 3/4 cups White Wine Vinegar
- 1/2 cups Water
- 1/2 cups White Sugar
- 1/3 cups Canola Or Vegetable Oil
- 1/2 cups Parmesan-Romano Cheese Mix (Use Either Fresh Grated Or The Kraft Mix)
- 2 Tablespoons Pectin
- 2 slices Bacon, Fried Crisp (but Not Too Brown), Finely Chopped
- 1 whole Egg
- 1-1/2 teaspoon Salt
- 1 teaspoon Lemon Juice
- 1 clove Garlic, Minced (about 1 Teaspoon)
- 1/2 teaspoons Italian Seasoning
- 1/4 teaspoons Red Pepper Flakes
- 1/4 teaspoons Ground Pepper
- Cut all vegetables into whatever size or shape you desire for your salad. Toss in a large salad bowl until evenly mixed. Serve this salad with Zesty Bacon Vinaigrette dressing on the side. Or use your favorite salad dressing.
- To make the vinaigrette, toss all the vinaigrette ingredients in a blender and blend until well mixed, about 30 seconds to 1 minute. Then, heat the vinaigrette in a double boiler for 30 minutes, stirring thoroughly every few minutes.
- Serve warm or cold over the Crunchy Winter Salad.
