Pepper Quinoa Stuffed Giant Mushrooms
- 8 Extra Large Brown Mushrooms
- 1/2 Onion, finely chopped
- 2 cloves Garlic, Finely Chopped
- 1 Tablespoon Olive Oil
- 1 Red Pepper Finely Chopped
- 1 cup Finely Chopped White Button Mushrooms
- 1/2 cups Quinoa
- 1/2 cups Coconut Milk
- 2 cups Water
- Salt And Black Pepper To Taste
- Preheat oven to 180u0b0C (355u0b0F). Place the extra large brown mushrooms in a baking dish.
- Fry onion and garlic in olive oil until translucent. Add red pepper and fry for about 1 minute. Add the chopped button mushrooms and fry for another minute.
- Add the quinoa, coconut milk and water and simmer vigorously for 15 minutes, until quinoa is tender and sauce is thick.
- While quinoa is cooking, place brown mushrooms in the oven and bake for 15 minutes. When sauce is done, season with salt and black pepper to taste. Pour into the mushrooms (it's fine if some overflows!). Bake for another 5 minutes until mushrooms are tender and sauce is bubbling.
