Crawfish Cornbread
- 2 c. yellow corn meal
- 1 can yellow creamed corn
- 1 1/2 c. grated Cheddar cheese
- 2 jalapeno peppers, finely chopped
- 1/2 c. bell pepper, finely chopped
- 3/4 c. chopped green onion
- 1 c. milk
- 1 lb. crawfish tails
- 3 eggs
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. soda
- 1 onion, minced
- 1/2 c. cooking oil
- Saute onion and bell pepper in small amount of butter.
- Cook until onion becomes transparent.
- Add chopped jalapeno pepper. Set aside.
- Mix in all ingredients, except crawfish.
- Add cooked onion and pepper.
- Stir in crawfish tails.
- Pour in lightly greased pan.
- Bake in preheated oven at 400u0b0 for 35 to 45 minutes.
