Butter Cookies
- 1/2 cups Unsalted Butter, Room Temperature
- 1/2 cups Sugar
- 1 teaspoon Vanilla Extract
- 1 whole Egg White
- 1-1/2 cup Flour, Plus 2 Tablespoons
- Coarse Sanding Sugar, For Decoration (optional)
- 1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper, and set aside.
- 2. On medium speed, cream together the butter and sugar with an electric mixer.
- 3. Mix in the vanilla and the egg white.
- 4. On low, add the flour, and mix until combined.
- 5. Roll the dough into quarter-size balls. Place each ball on the lined baking sheet, about 1 inch apart. Using the palm of your hand, gently press down on each ball. If using, sprinkle each cookie with the coarse sanding sugar.
- 6. Bake, rotating pans halfway through, about 13-15 minutes, or until the cookies begin to turn golden in color. Cool completely on a cooling rack, and enjoy!
