Butter Cookies

  1. 1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper, and set aside.
  2. 2. On medium speed, cream together the butter and sugar with an electric mixer.
  3. 3. Mix in the vanilla and the egg white.
  4. 4. On low, add the flour, and mix until combined.
  5. 5. Roll the dough into quarter-size balls. Place each ball on the lined baking sheet, about 1 inch apart. Using the palm of your hand, gently press down on each ball. If using, sprinkle each cookie with the coarse sanding sugar.
  6. 6. Bake, rotating pans halfway through, about 13-15 minutes, or until the cookies begin to turn golden in color. Cool completely on a cooling rack, and enjoy!
  7. Makes about 2 dozen cookies
