Vegan Banana Bread
- 2 whole Large Bananas
- 3/4 cups Date Sugar
- 1/4 cups Unsweetened Applesauce
- 1/3 cups Almond Milk
- 1 Tablespoon Lemon Juice
- 1/4 cups Coconut Oil, Melted
- 1/2 teaspoons Pink Salt
- 1 Tablespoon Pure Vanilla Extract
- 1-1/4 cup Rice Flour
- 1/4 teaspoons Xanthan Gum
- 1 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1 Tablespoon Flax
- 1 Tablespoon Cinnamon
- 1/2 cups Chopped Walnuts (optional)
- Preheat oven to 350u0b0F.
- In a large bowl, mash soft, ripe bananas with date sugar until smooth. Add applesauce, milk, lemon juice, oil, salt and vanilla. In a small bowl, combine the flour, xanthan gum, baking soda, baking powder, flax and cinnamon. Add the flour mixture to the wet and whisk all ingredients together until well combined. Add walnuts if desired.
- Pour in a 9 by 5-inch bread pan. Bake at 350u0b0F for 30-32 minutes. Check with a toothpick inserted in the center to be sure it's done. Let cool for a few minutes and enjoy!
