Barbecued Squirrel
- 3 to 4 squirrels, dressed
- flour
- salt and pepper
- cooking oil
- 1 c. vinegar
- 1 tsp. salt
- 2 Tbsp. brown sugar
- 1 Tbsp. paprika
- 1 tsp. dry mustard
- 1/2 c. chopped onion
- 1 c. tomato juice
- 1/4 c. chili sauce
- 1/4 tsp. chili powder
- 2 Tbsp. Worcestershire sauce
- 2 tsp. hot pepper sauce
- cayenne pepper
- 2 tsp. garlic powder
- Cut up the squirrels into serving size pieces.
- Dredge in salted and peppered flour and brown in cooking oil.
- Prepare barbecue sauce by combining remaining ingredients in a saucepan and cooking over low heat for 15 minutes.
- Pour the sauce over the meat, cover and bake at 325u0b0 for 45 minutes or until tender. Uncover the pan and broil an additional 15 minutes.
