Fantastic Fruit Muffins
- 1 1/4 c. flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 2 c. Fruit & Fibre cereal
- 1 c. skim milk
- 1 egg, slightly beaten
- 1/2 c. chunky applesauce
- 1/3 c. firmly packed brown sugar
- 2 Tbsp. Parkay sticks or spread, melted
- 15 oz. Raisin Bran (5 c.)
- 5 c. flour
- 5 tsp. baking soda
- 2 tsp. salt
- 3 c. sugar (half brown and half white)
- 1 c. raisins
- grated peel of 1 lemon
- 1 1/2 c. nuts
- 1+ c. chopped non-sugared dates
- 1 (15 oz.) can crushed pineapple with juice
- 1 c. oil
- 4 eggs, beaten
- 1 qt. buttermilk
- Sift flour, soda and salt together into large mixing bowl.
- Add all other ingredients and stir well.
- Place in container (gallon glass jar works well) and put into refrigerator.
- Use as needed (makes 3 dozen or more).
- This will keep up to six weeks.
- The mixture turns darker and gets even better in time.
- Bake at 400u0b0 for 20 minutes.
