Pecan Crunch Cookies

  1. Cream together butter, sugar and vanilla.
  2. Stir in potato chips, pecans and flour until well combined.
  3. Form into small balls, about 1/2 inch in diameter.
  4. Place on ungreased cookie sheet or on a parchment paper lined pan.
  5. Press the dough balls down with bottom of a tumbler dipped in sugar.
  6. Top each cookie with a half of a pecan.
  7. Bake at 350F for 12 - 18 minutes, depending on the size of the cookies. Cool completely before serving.
  8. Note: When they are done, the cookies should be light in color...like shortbread.
