Pecan Crunch Cookies
- 1 cup Softened Butter, Unsalted
- 1/2 cups Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1/2 cups Crushed Potato Chips, Regular Flavor
- 1/2 cups Finely Chopped Pecans
- 2 cups All-purpose Flour
- 1/4 cups Sugar To Use When Pressing Down Cookies
- 1/2 cups Pecan Halves To Top The Cookies
- Cream together butter, sugar and vanilla.
- Stir in potato chips, pecans and flour until well combined.
- Form into small balls, about 1/2 inch in diameter.
- Place on ungreased cookie sheet or on a parchment paper lined pan.
- Press the dough balls down with bottom of a tumbler dipped in sugar.
- Top each cookie with a half of a pecan.
- Bake at 350F for 12 - 18 minutes, depending on the size of the cookies. Cool completely before serving.
- Note: When they are done, the cookies should be light in color...like shortbread.
