Pasta Hanleyardi
- 1/2 to 1 lb. cooked, peeled and deveined shrimp
- 1/2 c. olive oil
- 3 to 4 cloves garlic, minced
- 1 lb. vermicelli (or your favorite pasta)
- 1/2 to 1 lb. fresh broccoli florets
- 1 tsp. salt (optional)
- fresh lemon
- Parmesan cheese
- Steam broccoli just until tender in saucepan or in microwave oven in a covered dish, about 5 minutes.
- Cook pasta in large pot of boiling water and salt according to package directions.
- While pasta is cooking, heat olive oil on medium flame in 12-inch frying pan.
- Saute garlic for about 1 minute, then add shrimp.
- Saute another few minutes until shrimp are heated through.
- Drain pasta and place on platter.
- Place drained broccoli over pasta.
- Pour shrimp and olive oil over broccoli.
- Serve with lemon and Parmesan cheese if desired.
