Caramel Eggnog Cookies

  1. 1. Mix flour, baking powder, cinnamon and nutmeg in a large mixing bowl and set aside.
  2. 2. Mix butter and sugar together in the mixer until creamy.
  3. 3. Add egg yolks, eggnog and vanilla to the butter mixture and beat until creamy.
  4. 4. Add the flour mixture to the butter mixture and beat until creamy.
  5. 5. Add caramel bits to the cookie dough and stir by hand. Make sure that the caramel bits are frozen. This keeps them from melting too much when the cookies are baked.
  6. 6. Drop cookie dough by teaspoonfuls onto an ungreased cookie sheet and sprinkle with nutmeg.
  7. 7. Bake at 300 degrees for 20 minutes. Cool cookies on a cooling rack or aluminum foil. Put on a plate and enjoy!
  8. Makes about 6 dozen cookies.
