Goat Cheese Salad
- FOR THE SALAD:
- 3-5/8 ounces, weight Lamb's Lettuce, Washed
- 3-5/8 ounces, weight Mixed Tender Leaf Salad Greens, Washed
- 20 whole Cherry Tomatoes, Washed And Halved
- 7 ounces, weight Sun-dried Tomatoes In Olive Oil, Drained
- 7 ounces, weight Fresh Goat Cheese, Cut In Slices Of Around 1.5 Cm
- FOR THE BALSAMIC DRESSING
- 8 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 1 Tablespoon Honey, I Used Mint Honey
- 1 pinch Salt
- 1 pinch Freshly Ground Black Pepper
- First prepare the dressing. Into a small bowl, add all of the dressing ingredients and whisk them with a fork until you obtain a homogeneous sauce. Taste and if necessary add more salt and pepper.
- Put the salad greens (lamb's lettuce and leafy greens) into a bowl and pour the balsamic dressing into it. Mix well. Then transfer the salad onto a large serving plate.
- Now, nicely arrange the cherry tomatoes, the sun-dried tomatoes and the goat cheese on the top on the salad. Serve the Goat Cheese Salad with fresh bread or croutons.
- Do not dress the salad earlier than 30 minutes before your meal or it will become flabby and loose its volume.
