Fresh Apple Cake
- 3 c. apples, chopped
- 1 (6 oz.) pkg. butterscotch chips
- 1 c. pecans, chopped
- 1 c. salad oil
- 2 eggs
- 2 c. sugar
- 1 tsp. lemon extract
- 2 1/2 c. flour
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1/4 stick margarine, melted
- 1 tsp. rum flavoring
- In large bowl, mix oil, eggs, sugar and lemon extract.
- In separate bowl, sift together flour, soda, salt, cinnamon and baking powder.
- Add to first mixture.
- Stir in nuts and apples.
- Mix well. Spread mixture in greased 13 x 9-inch pan.
- Sprinkle butterscotch chips over batter.
- Bake at 350u0b0 for 55 to 60 minutes.
- Brush top of warm cake with butter and rum.
- Serves 6 to 8.
