Farmer’S Breakfast
- 1 whole Onion
- 1 whole Bell Pepper
- 1/2 pounds Breakfast Sausage
- 2 whole Potatoes
- 6 whole Eggs
- 3 slices American Cheese
- 1 Tablespoon Olive Oil
- Chop the onion and green pepper. In a small skillet, brown the breakfast sausage. Cut up the potatoes into small cubes. In a large skillet, add the potatoes and enough water to cover; bring to a boil, reduce heat and simmer. Cook just until they are tender, but not cooked through. Drain.
- Add oil to a large skillet and heat. Add the drained potatoes, onions and peppers; season with salt and pepper. Cook and stir until the vegetables start to brown nicely. Add the cooked, chopped breakfast sausage.
- In a bowl, beat the eggs. Add to the sausage mixture, cooking while pulling back the sides to let the egg mixture cook thoroughly on the bottom.
- Turn broiler on in the oven. When egg mixture is getting brown on bottom, put it under the broiler to finish the top. Before the top browns, add cheese and cook to melt.
