Orange Crush-Cakes
- FOR THE CUPCAKE:
- 1 cup Butter, Softened
- 1-1/4 cup Sugar
- 5 whole Eggs
- 2 teaspoons Vanilla Extract
- 2 whole Oranges, Zested
- 3 cups Flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1/2 cups Milk

- FOR THE FROSTING:
- 1 cup Butter, Softened
- 5 cups Powdered Sugar
- 1/2 cups Orange Crush Soda
- 1/2 teaspoons Orange Flavored Extract
- To make cupcakes, preheat oven to 350 degrees F. Beat butter and sugar until fluffy. Add eggs, vanilla and zest of 2 oranges. Add flour, baking powder and salt. Add in milk.
- Fill muffin cups 2/3 full (I use paper cup liners). Bake for about 20 minutes.
- Meanwhile to make frosting, beat butter until fluffy. Add in powdered sugar, orange Crush and orange extract. Beat for about 4-5 minutes. Frost cupcakes when cooled. Enjoy!
