Chocolate Chocolate Chip Muffins
- 2 whole Eggs
- 1/2 cups Vegetable Or Canola Oil
- 1 cup Milk
- 1 teaspoon Vanilla Extract
- 1-3/4 cup All-purpose Flour
- 1/2 cups Granulated Sugar
- 1/4 cups Cocoa Powder
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1/2 cups Semi-Sweet Chocolate Chips
- In a medium bowl, combine eggs, oil, milk and vanilla. Mix well.
- In a larger bowl, combine flour, sugar, cocoa, baking powder, salt and chocolate chips. Make a "well" in the center of the dry ingredients. Pour the egg mixture into the well.
- Fold mixture gently until all ingredients are mixed. Small lumps are okay.
- Spoon into a greased or paper lined muffin tin. Sprinkle a couple of chocolate chips on top of each muffin.
- Bake at 400u0b0F for 20 minutes. Remove from the pan and cool on a wire rack.
